decided to dig around for some delicious recipes to cook in honor of St. Patrick's day.

This are Dessert recipes.

Potato Pancake Recipe:

Ingredients

2 large potatoes, peeled and shredded
3/4 cup shredded deli smoked ham
3 eggs
3/4 cup shredded mozzarella cheese
1 teaspoon onion powder
1 teaspoon garlic powder
salt and ground black pepper to taste
olive oil for frying
1 green onion, chopped
1/2 cup grated Parmesan cheese

Directions

Combine potatoes, ham, eggs, mozzarella cheese, onion powder, garlic powder, salt, and black pepper in a bowl.
Heat a large skillet over medium-low heat. Pour enough olive oil to cover bottom of pan.
Scoop up about 1/2 cup of potato mixture per pancake and form into a patty. Repeat, making 8 patties in all.
Place 4 pancakes at time in hot olive oil. Cook until browned, about 4 minutes on each side. Transfer to paper towel-lined plate.
Sprinkle with green onion and Parmesan cheese.

Ingredients

4 cups all-purpose flour
1/4 cup white sugar
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon salt
2 eggs
1 1/4 cups buttermilk
1/4 cup corn oil
1 cup raisins

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet, or line with parchment paper.
In a large bowl, stir together the flour, sugar, baking soda, baking powder, and salt. In another bowl, whisk together eggs, buttermilk, and corn oil. Make a well in the center of the flour mixture, and pour in the buttermilk mixture. Add the raisins, and stir a few times, just until the ingredients come together into a soft dough. Turn the dough out onto a floured surface, and with floured hands shape dough into a ball. Place the dough on the prepared baking sheet, and cut a large cross in the top with a sharp knife.
Place the bread on a middle rack of the preheated oven, and bake until golden brown, 30 to 40 minutes.

Irish Potato Candy:

Ingredients

1/4 cup butter, softened
1/2 (8 ounce) package cream cheese
1 teaspoon vanilla extract
4 cups confectioners' sugar
2 1/2 cups flaked coconut
1 tablespoon ground cinnamon

Directions
In a medium bowl, beat the butter and cream cheese together until smooth. Add the vanilla and confectioners' sugar; beat until smooth. Using your hands if necessary, mix in the coconut. Roll into balls or potato shapes, and roll in the cinnamon. Place onto a cookie sheet and chill to set. If desired, roll potatoes in cinnamon again for darker color.
