I just discovered my 5 lb bag of potatoes that I bought a couple of weeks ago and hid in a cool, dark spot. I need to cook them all before they go bad. Those bags of potatoes always seem like a good idea when I get them. Help!

3 large baking potatoes
2 teaspoons salt
Boil the potatoes in their skins for 20 minutes. They will still be a bit firm. Drain the potatoes and peel the skins off. Grate them using a vegetable grater and toss them with the salt.
3 slices bacon, cut into lardons
1 small red onion, small dice
1 teaspoon thyme, chopped
2 tablespoons oil
2 ounces butter
Add the bacon to a small non stick sauté pan and heat on medium low to render the bacon fat. (This will take a while; it is rendered when a good portion of the fat has liquefied, which tends to happen in a rush after a few minutes.) Cook until almost crisp and add the onions. Gently sauté until tender, about 2 minutes, and fold in the chopped thyme. Gently fold this mixture into the potatoes.
Heat the same sauté pan the bacon was cooked in over medium high heat and add the butter. Pour in the potato mixture and pat it down to form a cake. Cook until the potatoes are golden brown and flip. Slide the potato cake out onto a plate and cut into wedges.
This works best if the saute pan is small enough for a cake to take up the entire pan surface.
