I am in love... With cooking!
My dad bought me the Moosewood Restaurant's Low-Fat Favorites cookbook and Jill bought me Rachel Ray's Thirty Minute Meals: Veggie Meals and I discovered that I really love cooking. Well, I'm still over here, on the other side of the water....boring. It's funny because everyone tells me "wow! you are so lucky to be living in Europe!"....ummm, so far its been 7 mths and quite honestly, I'm ready to come home. The cathedrals and landscape are spectacular, but after awhile it just gets pretty...routine??? My mom cried...again...on Christmas. Carolyn sends me lots of pics of the kids...they're getting so big! I feel like I'm definitely missing out on some key moments. I'll be home for my birthday--big bash at my house because my brothers are insisting--so keep your schedule OPEN please.
As for cooking--mommy is way too far away to cook for me so Jamie gets to EXPERIMENT!!! Actually, I make some pretty good food when put to my own devices. Scary, huh? I don't even eat junk food at all anymore...the army gives you a fit mindset I guess. I won't go near cookies or cupcakes...I still indulge in ice cream though. You can't be fat in the army..that's why I'm counting down to the day when I CAN indulge in sweets.
I got my stupid knees checked out...they're finally breaking. I start physical therapy this month. grrrrrr....
