Hi folks :)

Busy busy busy bee here.

Fema called leaving an auto message that stated they had reviewed our paperwork and found everything in order, also stating that since we were in one of the two hardest hit areas it will not be necessary for us to meet with appraisers there (Wow, I knew that our area was bad, but in the top two areas???!). They stated that we should be hearing from them within the next few weeks.

I also have spoken with the appraiser for the insurance company that would pay off our remaining mortgage and am waiting for he & the mortgage company to contact each other. I am hoping that part will be a wash and we will not end up owing money for our destroyed home in New Orleans. I am sure that we will have to clear the rubble of our house from the lot (which will cost between 5-10k), then perhaps later down the road find a buyer for the property... Anyone insterested in some swampland in New Orleans ? (lol)

Carocrow and I spent the day yesterday running errands and looking at various areas of Natchitoches that we might be interested in to purchase a home.
We are particularly interested in this house:


I am feeling a bit tenative about contacting the realtor until we have the financial matter of our flooded house out of the way, also we have not yet heard from the SBA, who we applied to for a loan which we would use to purchase this house. If it is meant to be it will be, it seems very perfect for us and in a very quiet area on the outskirts of town.

I got some really good food type supplies in Alexandria the other day at a Thai market :), Hot Sweet Chili sauce, sticky Jasmine Rice, Green Curry paste, Coconut milk and thai spiced rice vinegar. I made some cucumber salad that was a huge hit, the next one I make I will take some measurements and post a recipe. I also now own one the coolest bundt cake pan ever seen which was purchased on sale at Marshalls


, isn't it beautiful ? I am twitching to make a cake in it, I will just make my first try with a red velvet cake mix and something drizzled or sprinkled atop tomorrow.
Any good bundt cake pan recipes or even pre-packaged cake mix suggestions for my cool new toy?
