I'm going to try to document my baking. I'm trying not to do it as much, since it's hard to find people to eat it (I KNOW, right??) but I might as well virtually share my treats, right?
So today was Pumpkin Cupcakes with Cream Chese frosting.
I've made
Paula Deen's pumpkin bars before, but I needed a treat to take to the DAR meeting/potluck tomorrow and I wanted something a little nicer than bars. So I did them as cupcakes and reduced the bake time to 15 minutes and they turned out pretty good.
I put the frosting into the plastic pastry bags I got for $2 at Daiso a month or so ago (which was extraordinarily messy - I'll need lots more practice) and used that to pipe the icing on-- only I think the star tip was a little small, so I had to make more circuits around the top of the cupcake than was ideal.
The "downside" was that I had far more frosting than cupcakes-- so I've decided to use the rest on from-scratch cinamon rolls (using a recipe from my breadmaker), which I am letting rise at the moment. Pictures will follow once they're out of the oven.
