quinoa pilaf with veggies

~ 2 tablespoons olive oil
~ 1/2 medium onion, diced
~ 1 shallot, minced
~ 2 cloves garlic, minced
~ 1/2 red pepper, diced
~ 1 cup dry quinoa
~ 2 cups veggie stock (I dissolved one veggie bullion cube in 2 cups boiling water)
~ 3/4 cup frozen green peas, thawed (this amount is left on what I had in the freezer)
~ spices, to taste (I used a few shakes of my catch-all Mural of Flavor from Penzey's)
Optional:
~ Crumbled feta cheese
~ Ground black pepper
~ Salt (I didn't add any because I used bullion)

Heat oil in medium pan. Add onion, red pepper, garlic, and shallot. Saute until slightly softened. Add quinoa (I rinsed mine in cold water first). Stir until evenly coated with oil and hot (about 5 minutes). Add stock. Bring to a boil, reduce heat and cover. Simmer about 15 minutes or until liquid is absorbed. Stir in peas and spices as desired. Cover for about 5 more minutes. Serve hot, topped with feta and black pepper if desired.

I like it as a hearty bowl on its own, but I could see adding tofu or tempeh, or nestling a (fake in my case) chicken cutlet on top. You can also substitute whatever veggies you like and/or have on hand. Yum yum yum.
