Now that I am back to work six days a week, it has serious reduced my cooking endeavors - mostly because I am HUNGRY when I get home! So, in lieu of posting what I have made, here is a non-exhaustive list in no particular order of some of the things I want to make once I have time:
Last night was "Greek meze" for dinner. I made some hummus, cobbled together some chickpea patties as a pseudo-falafel, whirred up some runny tzatziki because I forgot to salt the cucumber, and plopped some kalamata olives on the side. It needed some tomatoes, greens, or both, but it worked out.
I did soak and cook the chickpeas myself, as well as some black beans for later use. Rehearsal starts later today (but goes through the evening), so I stayed up late baking some sandwich bread before we ran out. So I have been cooking and baking, but on a more subsistence and less experimental level. As long as I am not hungry, I won't complain.
