The Knolls

I guess that there has been quite a bit of fanfare at the Marina Bay Sands Integrated Resort, such that Resorts World is missing out on any media attention. It was my second visit to The Knolls at the Capella Singapore. The hotel for one has made the news as a six-star establishment, and part of the hotel was designed by Norman Foster.

Anyway, the restaurant itself is tucked away on the first level of the hotel by the pool. Bob's Bar sits just above it. Having already experienced the Sunday brunch, I was better prepared for the dining experience. It was a lot quieter on a weekday night of my visit, with probably about ten tables taken.

Started with the Tuna Loin (with watermelon and couscous), followed by the Steamed Cod with Porcini Risotto and Lemon Emulsion. Washed it down with a Sauvignon Blanc from the Marlborough region of New Zealand, followed by the Dessert Tasting.

I have to say that service was excellent, and the food was good. I think the watermelon in the Tuna Loin starter gave the dish some edge, and the risotto was oozing rich mushroom flavours that counterbalanced the subtlety of the steamed cod. Dessert was also delightful.

With the dying day slowly dissolving into night, the restaurant did take on a different atmosphere. The ships anchored offshore presented themselves like fairy lights in the sea. I might suggest that the restaurant, on a weekday night, might be a hidden gem of a location for a romantic dinner for two...
