At last, I've figured out a delicious dinner that doesn't require suffering in my kitchen with the stove and/or oven on in this heat. It is currently about 90 degrees in there, because the dagblasted pilot lights on the gas stove are continually heating up the air. You'd think it wouldn't have much of any effect, but it is brutal right now.
My new favorite dish is, therefore, the following.
- take a clean bowl
- tear up baby spinach into the bowl
- top with a handful of grape tomatoes
- top with a chopped-up fully cooked & cold sweet Italian sausage (I like the ones from Trader Joe's)
- top with chunks of fresh mozzarella
- top with homemade salad dressing: olive oil, white wine vinegar, aged balsamic vinegar, oregano, basil, salt
- top with fresh-ground pepper
Eat with a giant glass of frosty-cold milk to wash it all down.
Plus, it's healthy. Ahhh...the goodness of coldness.
