Mediterranean cuisine: Bell Peppers & Tomatoes stuffed with Couscous

I'm becoming a fan of mediterranean cuisine becos they're relatively healthy & it's kind of like a mix between east & west which satisfy my tastebuds at the moment! :D

Ingredients:
Couscous (it's a kind of rice but like rly small grain & cute hahaha)
Pine nuts/Walnuts (your choice)
Tomatoes
Mushroom (I used portabello)
Bell Peppers
Salt & Pepper
Mixed herbs (rosemary, oregano etc)
Basil leaves
Greek yogurt & butter (optional)
Garlic & Onion

Methods of Preparation:
Steam couscous & pine nuts

Cut bell peppers & tomatoes. Scoop the insides of the tomatoes & use it to fry with the rice later

The rice is kinda like fried rice, so here's what you do:
Fry onion & garlic in olive oil
Add couscous w pine nuts in
I threw in the tomato insides
I added a bit of fat-free greek yogurt
Add basil leaves & parsley (if you wish)
Fry everything
Add herbs, salt & pepper

(PS: you shld srsly add butter to the fried rice, it'd be really nice. I didnt for obvious reasons)

Put the cooked rice inside the bell peppers & tomatoes
I added the mushrooms here (didnt wna fry it cos I wanted the juice of the mushroom from baking it)
I added more onions here too cos I like onions a lot & I prefer them raw
I brushed a wee bit of olive oil on the skin of the tomatoes & bell peppers
Baked them for about 20 mins?

You might wna bake the bell peppers & tomatoes first so that they'd be cooked more thoroughly.
