menus for the week(s)

I found some cookbooks a while back which helped shake up our boring dinner selections and help keep me from being quite so frustrated with figuring out dinner.  (if you are interested i just found almost all of the recipes online *free, all menus can be made in 20 mins as they wrote them- I make too many of the things on my own (like if the salad involves shredded carrots- i shred them rather than getting from salad bar- and make my own dressings etc but still faster than many options and in different combos especially maindish/sidedish combos than I would have thought of - ie artichoke and white bean frittata with apple and beet salad  (omg so so good!)

We are still trying to keep food as on the cheep as possible.  with wic, coupons, and only buying the super heavily pesticide laden foods organic- I think we have kept the bill to 60 a week for the next two weeks. Last week we were at about 50. Anyway instead of longing for the ability to eat the way I dream, I am going to be grossly proud of our ability to eat fairly balanced/healthy and cheeply.
So on the menu for the next couple weeks-

-emerald tofu- adapting from emerald prawn recipe with tofu instead (cilantro, basil and parsley sauce over friend tofu)
-tvp sloppy joes (have some beef flavored tvp from mil that we need to use) carrot salad
-ravioli (normally I make with eggroll wrappers and filling but this time we bought premade) We always make extra. ranch salad
-leftover ravioli will be used in a variation of tortellini soup (aka ravioli soup)
-taco pizza - refried beans, cheese, lettuce, salsa and taco sauce  (plus tomatoes and onion for all but me)
-veggie stirfry
-lemony omelet with baked rosemary potato chunks
-spaghetti, green beans, ceasar salad (homemade salad dressing and spag sauce
-lentil soup, salad
-bourbon salmon, mashed potatoes, peas  (we have some salmon in the freezer)
-fish sticks, corn and salad (dh wanted this for when I am out)
-mushroom slop/aka mushroom stroganoff and wedge salad
-frozen pizza salad
-tofu lomein

Most veg are frozen (many from our garden-though that supply is running out quickly) we have lots of romaine lettuce because we have salad at basically every meal.  lunches are basically leftovers, sandwiches or a quick veg soup but oh well- if I can do this for a few more months....
