Vulcan arranged marriages are to deal with the offset of Ponn Farr, if you know there is a chance your son as an adult is going to die if he is not wed then why leave it to chance, find him a mate as early as possible. Long life expectancy is also not unique to Vulcans, according to wiki in the 23rd century human LE is 120 years old, Andorians live longer than humans, and its never been said how many humanoid species are members of the Federation of who they are. Chances are just like its only a minority of humans who mate outside their own ethnic group today, perhaps only a small percentage of Vulcans have non Vulcan mates. If you have a guaranteed Vulcan spouse from childhood who meets their LE there is no real need to step outside your culture to intermarry- it would not be considered logical. It seems once one is a single Vulcan you are free to pick who you want, TOS Sarek probably had a human women preference, his second wife was human, he could have picked a Vulcan woman but did not. Or maybe having been used to a human wife he stuck with what he knew. In the Prime universe there probably are mixed species folks living their lives, including mixed Vulcans but if writers chose to limit their mixed Vulcan intake to Spock and Spock alone then that's their perogative. Some reboot writers do stretch their imagination and have Vulcan/Other characters. There is a fic called 'Tuesday nights with Sirin'. Spock's cousin, a doctor who lives on earth, and is engaged to a human woman, there are other human woman in the book with Vulcan boyfriends and bond mates and they meet up now and again and compare notes. Its a sweet, enjoyable story.
