or at least, corn for me is evil. massive digestive upset, if i get more than a trace, and even a trace i can usually tell.
silly yak, my main premade gf bread company, doesn't have any corn in their products.
and i've found that Pamela's bread mix doesn't have corn, if i wanted to make stuff at home.
but every gluten-free bakery-type product is suspect, esp the inexpensive ones. (note: "inexpensive" for gluten-free is like $3-4, good stuff is usually more like $5-6.)
so far, easily 75% of the gluten-free items have corn/cornstarch as a main ingredient, to substitute for wheat.
my favorite baking-flour mix doesn't have corn, but baking-powder does...i need to make a pilgrimage to Hyvee for the one made with potatoes. :(
It's entirely possible that corn is responsible for some other issues I have...but the idea of culling ANOTHER ubiquitous ingredient completely out of my foods...makes me want to stop eating. anything. ever. :(
