Yesterday, we went to a bluegrass festival and crafts fair in West Virginia. In addition to all the good music, strange crafts, great hot sauces and model trains, we came across a food item which I has never heard of before: butterfly potatoes. Initially, I thought that there were merel potato chips, but I was wrong. Dead wrong.

Butterfly potatoes are a marvel of human inegnuity, a merging of American know-how with our favorite crop item. What they do is, they hook a potato up to a drill with a small-gauge auger bit. The drill is set in place via a specialized apperatus to a deli slicer. When the drill is turned on and a bit of pressure is applied, the potato is sliced while rotating, creating the butterfly pattern. The whole mass is then deep-fries, coated in cheese sauce and ketchup, and served up on a styrofoam plate.

I really cannot accurate describe how disgusting this was, nor how abslutely delicious it was. I would highly encourage people to try some if they have a chance, and to make their own butterfly potato apperatuses as soon as possible.
