Making challah to lift myself from my waaah waaah cranky mood. Sweet tiny robot Jesus, is this flour sucking up moisture! It's kept in a plastic bin with a seal; the moment I put it out onto the board it's like OMG THIRSTY PLEEEEEZE GIVE ME ALL THE WATER EVERYWHERE. It's taking water from the hot humid atmosphere. It took at least a 1/4 cup of water more than the proportions usually take. My dough has turned into a gorram sponge. (Clarification: Not the bread!jargon type of sponge - the "absorbent and yellow and porous is he" type of sponge.) I used half the yeast in the recipe and set it to rise in the fridge because it wants to rise NOW RIGHT NOW and if I let it it'll taste like flour paste with yeast on top. Still, I bet it'll rise in half the time it's supposed to. I FEAR MY DOUGH.
