Recipe Post! Cauliflower Soup Thing

In an attempt to eat more vegetables, soup, and possibly salad (I hate salads D: boo!) I decided to try cooking some cauliflower I found in the fridge.

Cauliflower is healthy and low in fat and carbohydrates. Wikipedia may not be the best place to find info, but I like to believe it.

Ingredients:
1 head of cauliflower
1/2 onion
Olive oil for frying
Water
White Pepper (or black pepper)
Salt

Directions:

1) Dice onions and saute with olive oil in a pot



2) When onions are clear and fragrant, add about 1/2 cup of water and cauliflower. I steamed my cauliflower first to make it cook faster, but that's optional~



3) When cauliflower has gone all soft and squishy, use an immersion blender to puree the soup. Alternatively, you could add it to a blender in batches to puree. Add salt and pepper to taste.





YOU ARE DONE WOW THAT WAS EASY



POINT!
Try adding different spices such as curry or garlic!
Try adding other vegetables after everything has been pureed. I want to try carrots, corn, onion chunks, etc.

Sorry the final photo looks so blah. I tried drizzling olive oil and adding black pepper for more color contrast ^^; It's just very white
