Harvest, for me, is baking time. Big, almost buffet style table laden with different kinds of bread, pastries (apple features strongly and in many many things, as do dried fruit) and savoury pies and just laying out a SPREAD to graze on them all (with some cheese and sliced meat). I do most of my harvest celebrations in September and late August though.
It's also part of the longest term planning for Yule - the cakes are already baked, but there's so much more to bake and prepare and freeze. It;s like one of my Yule spreads, but the Yule spread happens after the BIG BIRD DINNER, and is made up more of preserves and pickles and left over meat as cold cuts and preserved pork pies and mince pies and dramatic sweet breads all kinds of baked yummy

Ah ha, ok, end of Summer mostly. So there's no real equivalent for our Turkey day then?
As for Yule, that sounds amazing. On this side of the pond, we do basically the same Thanksgiving meal for Xmas/Yule/Etc., some people will do a goose (never had goose, myself) or a prime rib along with turkey. My husband's family does the 7 fishes Italian thing, but honestly, it all sounds sort of boring compared to your treats and trads.
I really want to get into pickling.
