My diet means I get to have as many vegetables as I want. Oddly, daddy thinks this will work. He was utterly distracted by the cheetos. I have to replace potatoes in my diet 85.72% of the time. My doctor thinks his numbers are hillarious. She agreed on everything but the salt, protein levels and nuts. She said no nuts, but try it his way first if it makes you feel better. Then she laughed and laughed about the potatoes.
I am on a campaign to eat 8 cups of vegetables a day. So far, so good. I was allowed to have 1/4 of this sorbet from mexico that is just fruit. (I know, it isn't really sorbet.) I ate two spoonfuls this week. I am going to ask for shrimp chips. They are deliciously evil, but not as bad as American chips. Hee hee. Or jelly bellies. He didn't put candy on the list of banned things. I think he knows I don't do that often. It makes me rock and cry if my blood sugar is unstable.

Beets with Rosemary:
1 pound of beets in 1 inch cubes
4 sprigs of rosemary
1 teaspoon of olive oil
1 teaspoon of shredded garlic
Steam the beets in water with the rosemary until they are just tender. Drain and throw out the rosemary Toss in the olive oil and the garlic and warm them up. There ya go. It is vegan too.
Green Beans with Olives and Tomatoes
1 lbs of fresh green beans, stemmed and whole
1 tablespoon of chopped, olive oil-soaked, sun-dried tomatoes
1 clove of garlic, minced
1 shallot, minced
9 kalamata dry cure olives, crushed and pitted
1 teaspoon of olive oil
1/2 lime
In a frying pan, pour two tablespoons of water in with the green beans and set the heat on high. Allow the water to evaporate and keep the pan moving. Toss in the remaining ingredients and keep the pan moving. Warm through until the garlic and shallots mellow. Squeeze 1/2 lime over the top right before the shallots turn brown. I bet this would kick ass with parmesan cheese on it.
