As a mixed user here in ol' Sydneytowne, I would prefer gas. If there wasn't a supply cost, it'd be as cheap as chips. It's the best thing to use to heat water - if you shower for as long as I do, due to the cost. Annoying to run old gas systems, though. Ours means that you either have to have the water on really hard to be warm, or get it "just right" really low. Baths are impossible, unless you tak 40 mins to heat it (you have to have the water on "just enough" so that the flame is lit, but not so much that the water is rushing through barely being heated). Haven't learned how to use our bathroom sink taps yet - it's either boiling hot, or freezing cold. Newer systems, I'm told, are better.
Gas heating is also cheaper. We have a heater which (surprisingly) I use during Winter quite often. In fact, even though it was warm today, I turned it on at 8pm. This is because I took the cat to the vet for a check-up, so wanted to reward her for being sort of good (she was laying in front of the fire on her cushion looking up at me with "it isn't very warm right now! And you were mean to me today! I was /so scared/" eyes. How can one resist that?). For as long as I run the gas fireplace (or convection heater, in my old apartment) I'd probably have a heart attack upon receiving the bill, if it was electric!
My convection heater, which set me back over $2,000 had many different settings. The gas fireplace in this house has one setting for heat - on. It has a half setting, but was broken before I moved in. The convection heater for gas also had this nifty timer - it turned on half an hour before we got up, and turned off as we walked out the door that night. It was also programmed to turn on in the evening. It was great! We also did the "switch on to warm for half an hour then switch off" whenever it got a little chilly, but not so much so that the heat was needed full-time.
I have no idea about the pully switch thing - I'm guessing that's an older style hot water system for gas which allows you to "light the flame" whenever you want to go in there. In that case - it wouldn't be ideal to leave it on all the time. Our gas pilot light is on all the time - but the water is only heated when you turn the shower and sinks on in the warm through hot zones - you can hear the pilot light turn into real flame, sort of a "poof" noise. You'll be able to test what your button thing does by looking at your gas system in the "switch off" and "switch on" positions. You should likely see a difference.
Gas top stoves are fantastic - but gas ovens are /terrible/. Nothing comes out well - nothing! Even though it's a new oven!
