A couple of people have asked for the recipes for the bread I've made today. I'll share those, along with the other two my aunt sent me. I've had the chance to try all 4, and they are all delicious.


Chocolate Zucchini Bread

2 cups sugar

1 cup vegetable oil

1 tablespoon vanilla

3 large eggs

2 ¾ cups all-purpose flour

¼ cup wheat germ (I left this out, since I didn't have any, and it still turned out great)

3 tablespoons unsweetened cocoa powder

1 teaspoon each: salt, baking soda, cinnamon

¼ teaspoon baking powder

3 cups shredded unpeeled zucchini

Heat oven to 350 degrees. Grease 2 9- by 5-inch loaf pans. Mix sugar, oil, and vanilla in the large bowl of electric mixer. Add eggs, one at a time, beating well after each addition.
Combine dry ingredients. Add to egg mixture; mix well. Add zucchini and mix. Pour into pans.
Bake until toothpick inserted in center comes out clean, about 1 hour. Cool in pans for 10 minutes. Turn out onto wire rack.


Zucchini Bread
2/3 cup shortening

2 2/3 cups sugar

4 eggs

3 cups shredded zucchini

2/3 cup water

3 1/3 cups flour

2 teaspoons baking soda

1 ½ teaspoons salt

½ teaspoon baking powder

1 teaspoon ground cinnamon

1 teaspoon ground cloves

2 teaspoons vanilla

2/3 cup coarsely chopped nuts

2/3 cup raisins

Heat oven to 350 degrees. Grease bottoms only of 2 loaf pans, 9X5X3’. Mix shortening & sugar in a large bowl. Add eggs, zucchini, and water. Blend in flour, baking soda, salt, baking powder, cinnamon, cloves & vanilla. Stir in nuts and raisins. Pour into pans. Bake until toothpick inserted in the center comes out clean, about 60 to 70 minutes; cool slightly. Loosen sides of loaves from pans; remove from pans. Cool completely before slicing.


CRANBERRY NUT BREAD
Sift -

2 cups flour

½ teaspoon salt

1 ½ teaspoons baking soda

1 cup sugar
Combine -

1 beaten egg

2 tablespoons melted butter

2 tablespoons hot water

½ cup orange juice

¼ cup grated orange peel

Add to dry ingredients and stir until moistened. Add 1 cup whole cranberries and ½ cup chopped nut meats.
Bake at 325 degrees for 1 hour and 10 minutes in 2 well greased 1 lb. loaf pans.

Chill, wrap and refrigerate or freeze.


Blueberry Sour Cream Bread

2 1/3 cup all purpose flour

1 ½ tsps. Baking powder

½ tsp. baking soda

¾ cup sugar

1/3 cup sour cream

¼ cup vegetable oil

1 ½ tsps. Cinnamon

2 tsps. Vanilla

3 eggs

½ cup chopped nuts

1 cup frozen blueberries or strawberries, chopped

Preheat oven to 350 degrees. Grease and flour sides of 9X5X3’ loaf pan.

Beat flour, baking powder, baking soda, sugar, sour cream, oil, cinnamon, vanilla and eggs for 50 strokes. Stir in nuts and berries. Pour into pan.

Bake for 55 minutes or until toothpick inserted in center comes out clean.

Cool for 5 minutes in pan. Remove from pan and cool completely on wire rack.
This bread is really good with cream cheese!
