I'm sure that some of you think you hate eggplant, and that others among you would eat it with every meal like I would. Here's a recipe I would never have used if I didn't have six eggplant in my fridge, and which turned out to be excellent.

Eggplant Oven Fries (or Chips for you furriners) )

Ooh, a perfect opportunity to give you that recipe you asked for. As I said, it's ridic easy.

Mediterranean Chickpea Salad w/Lemon Dressing

dressing:
2 tbsp lemon juice
1 tbsp olive oil
1 garlic clove, minced
1/2 tsp dried oregano
1/4 tsp salt
1/4 tsp black pepper

salad:
1 medium cucumber, peeled and diced
2 cups cherry tomatoes, halved
1 15.5-oz can o' chickpeas, rinsed and drained
1 7-oz. jar o' roasted red peppers, drained and sliced
1 6.5-oz. jar o' artichoke hearts, drained and quartered
1/2 cup crumbled (low-fat if you want, but eff that) feta
6 pitted kalamata olives, coarsely chopped

1) whisk all that dressing shit together.
2) throw all that other shit in a bowl and toss it.
3) drizzle the dressing and toss again.
4) sprinkle the feta and olives on top.
5) strut.

I actually hate olives with a passion so I leave them out and the recipe is still delish. A very clean-tasting salad. You can also substitute the olives for a some diced red onion if you want crunchiness.

It's a Weight Watchers recipe, too! So you can house it. Except not really.

that sounds AMAZING. also, the strut step is clearly crucial. anything with red peppers AND artichoke hearts in it already has my love.

WW does not endorse strutting, but they should because it burns extra calories.

I love the way my house smells after I roast a batch. It's better than roasted garlic, tbh.

I have to be careful with them, though, because Kevin will eat them with a fork right out of the fridge, groaning with delight the whole time. I have personally watched him eat the last of three roasted red peppers out of a bowl, with the fridge door still open.

But, I mean, this is the guy who calls frozen enchiladas 'Mexicles' and will gnaw on them hunched over the sink, like a raccoon with a crawdad. I have to HIDE things I want to use later.
