Authentic Indian Chai Recipe

The original recipe was given to me by Brenda Rose Zollman.

Ingredients:

Fresh Ginger
2-3 Slices

Fresh Cinnamon
1 3" Stick

Cardamom Seeds
2 Pinches

Pepper Corns
2

Green or Black Tea
1-2 Teaspoons of Looseleaf or 3 Bags

Sugar
1/4-1/3 Cup

Milk or Cream
1/4 Cup

Directions:
* Add ginger, cinnamon, and cardmom to one pan of water.
* Bring to a boil.
* Infuse approximately 10 minutes to taste or smell.
* Add sugar and tea.
* Pour into cup and add milk to desired taste.

You can store the syrup (the whole concoction without the milk) in a container in the refrigerator for up to a week. The longer you boil the ingredients the stronger the tea. I like to leave it on low for several hours (don't leave it unattended) for a very potent batch. I also have several other spices and herbs that I add, depending on my mood or needs for the day. If you plan on serving this to anyone but yourself, don't add the sugar. Let them mix in their own preference of sweetener.

If you are having a tea party, it's fun to mix everyone their own cup, to their specific taste. Start with the raw ingredients, minus the sugar, and put them into a teabag. Or if you don't have one of those, try a coffee filter with the top twisted together to hold everything inside. You could leave it loose in the cup and do a tea leaf reading. This is a nice way to bring everyone closer together.

I like to have small cakes or cookies on a little plate as well as various sweeteners on the table. Honey, raw sugar, white sugar, brown sugar, Splenda, and Sweet n' Low are the choices I usually have available. (Anyone know of any others?)

You can also add ice to the syrup and have a cold drink. Great for summertime!
