Well, if it's your first time, I suggest the Even Simpler Recipe:
Take some eggs. And some milk. And some sweetener. And optionally some vanilla. And optionally some spices -- cinnamon, nutmeg, or whatever.
Mix it up. In a blender, or in a drink shaker, or with a fork, or whatever.
There ya go.
I don't normally buy eggnog, because it's one of those recipies that I can almost-literally make in my sleep, or at least, before I've fully woken up. I can stagger to the kitchen and make a glass of eggnog for my breakfast.
But, yeah. Eggnog is "milk, sugar, and eggs, plus stuff. Mixed up together."
The "stuff" is normally spices and/or alcamahols. You can replace the milk with soymilk, rice milk, or almond milk. You can replace the sugar with whatever other sweetener you like (that dissolves in liquid). I'm not sure what you could replace the eggs with, but I bet there's SOMETHING out there.
The "separating the eggs and beating the whites, and beating the cream" steps? I only do those when I'm trying to impress someone. It adds a lot of body and mouthfeel to the drink, but it's really not necessary.
My SIMPLE eggnog recipe is "pour a glass of full-fat milk mostly full. Crack an egg in it. Pour some sugar, agave syrup, honey, or whatever, in the glass. Maybe put some spices or whatever stuff in. Cap it off with a shaker tin, and shake hard. Remove shaker tin and drink."
