As you all know, I'm currently going to school for culinary arts, I'm in my second semester and have a portfolio due next Monday. I need a few more photos of nicely presented dishes (I have a lot of stir-fry/curry type stuff photographed, as well as desserts) so for the next few days I'll be taking pictures of fancy vegan food (since my personal focus after school will be veg*n dining). Tonight I made Eggplant Roulade Stuffed with Basil-Tofu "Ricotta" and Gemelli Pasta, which is basically long slices of eggplant layered with baby spinach and artichoke hearts, rolled around some basil-tofu "ricotta", a vegetable blend of gemelli pasta, and red wine tomato sauce. It was delicious, and I shared some with my upstairs neighbour, who gave rave reviews. Anyhow...
