I'm getting this batch bottled.
Right now.
"Christine's Sparkling Ale"
(Simcoe Ringwood Ale)
Boiled 1/2 pot of water.
Added 1kg wheat DME
1kg Light DME
.6kg (apx) white (cane) sugar
1 oz simcoe (bittering) hops
Boiled 45minutes.
Added 1kg light DME
1 boiled kettle (3L?) water
1 oz simcoe (flavouring) hops
Return to boil
Boiled 13 minutes.
Added 1/2 oz simcoe (aroma) hops.
Boiled 3 Minutes.
Added water to top up to 5 gallons.
Let stand to cool.
Filtered. Twice.
Transfered to carboy.
Added Wyeast Ringwood yeast pitch 1147
Notes, May 14th:
"May have been better to start with 3kg DME instead of adding the 3rd (kilo) part way through."
"Clear Brown Ale"
Notes, November 20th:
Added about 4/5 cups of finishing sugar for bottling.
"Pleasant mild hops."
Finishing gravity of 1.11.
