I've been eating nummy low-carb burgers today. The sort you can make with a microwave oven (hallelujah)!
You'll need:
-Beef mince (ground beef or hamburger to you Americans), 80 to 150 grams per patty
-Seasoning for the mince, to taste--I use a bit of salty soy sauce
-Full-fat mayonnaise
-Slices of your favourite cheese
-Several leaves of lettuce, enough to wrap the burger in. I used iceberg lettuce.
-Divide your mince into patties/"steaks" of your preferred size. I had a 400g box of it and divided it into four lumps. Pat each lump into a patty and arrange them on a wide, ceramic plate so they don't touch each other. Microwave as long as it takes for them to be thoroughly cooked--this will vary. I left mine in for six to eight minutes because there were four of them (one 100g burger will take about four minutes on 800 watts). Take the plate out (you'll need oven gloves for this, as it's going to be burning hot), scoop/wipe out the excess fat and fluid and stuff, add soy sauce and/or salt to taste and place the burgers on a different plate (I put mine in a Tupperware box in my fridge so I could make burgers throughout the day).
-When you make a single breadless hamburger thingy, take out the lettuce leaves, and make a couple of layers (two, three leaves) for the top and the bottom each, to serve as a bread substitute.
-Slap a generous amount of mayonnaise on both halves of your lettuce sandwich.
-Reheat the burger if you've kept it in the fridge (about a minute should do). Slap some mayo on the cooked burger as well.
-Lay down slices of cheese over both lettuce halves and place the burger in between them. You may want to put in a few tomato slices as well, or whatever you prefer, and if your carb count allows it.
-And voila. You've now got a lettuce/mayo/cheese/beef burger. You may heat it for a further minute in the microwave if you wish. Eat it. Messily. Without guilt and insulin spikes.
Hope that all made sense. It's a bit hard to describe the lettuce wrap thingy... but this is nice and fast and nummy. And the fat and the protein will keep you going for a while. And usually, you can eat pretty much unlimited amounts of lettuce since it has hardly any sugary carbs, but tons of nice, healthy fiber instead. Nom away!
