I'm not really good at recommendations, however, there was one story that has really stuck with me for a couple of years now. It's a Snape/Hermione story. You've probably read it before. "The Fire and the Rose" written by Abby & Domina, found at http://www.witchfics.org/

I'm glad you enjoyed them! Snape's POV is harder to pull off than Harry's, I think. But some of my favorite fics are on that list.
