There are many variations on Mojito, but my personal favourite is the one I had as a welcome drink at Krabi Centara.
1.5 shot Dark rum (Havana Club/ Cachaca?)
Splash of Soda
2 Sprigs of Spearmint
1 tablespoon of Brown sugar
Sprinkle of thinly sliced lime peels
Juice of 1 whole lime
Crushed ice
Tall glass
Muddler
WIth a muddler, add spearmint leaves to brown sugar in the glass and grind to release flavour. Add crushed ice, lime juice, rum and soda. Garnish with the lime peels. The brown sugar should not dissolve so quickly, so that the person will enjoy contrasting tastes and texture.
The reason to post this is, I'm researching on what is the best rum to use, so that I can buy one from Duty Free. For my many sleepless nights.
