Bento's Back, Baby!

I've decided that now that I'm working full time hours again and will be eating lunch/dinner at work most days, I'm going to start doing bento again. I did it for a few years in university, but then my schedule changed so I was only doing one or two classes a day and it seemed like too much effort to pack a lunch every day if I was only going to go home anyways.

The reason I love bento so much is that everything fits together in one lunchbox, so there's no fussing around with several containers and trying to make sure they all fit in one bag. And it's smaller servings of food, so I'm not worried about overeating or getting too full and having some food go to waste. It's all about maximising nutrional value with limited space. Some people go crazy with it and make little pieces of art out of their food. I'm not at that level yet, though!

I didn't know how much I missed it. Tomorrow's lunch was thrown together hastily using leftovers, but I'm going to try to make an effort to put together my bento more effectively and more importantly, I want to make it cute! :D

3 orange chicken wings, apricot, baguette, ssteamed asparagus and creamy dill potato salad.

Outside box: vegetable hummus for baguette and raspberry iced tea in tumbler

I love my little laptop lunch container, too! I do have an official bento as well. Maybe I'll break that out for Sunday's lunch. I'll skip bento on Saturday because I plan on getting butter chicken at the farmer's market again! mmmm.

Also, that potato salad is a little bit amazing. I made it using the dill I've been growing (which is now pushed off to the side of the aerogarden and is growing over the dome of the growlight! Holy crap! Repotting time, like, now!).

Creamy Dill Potato Salad

1 lb mini potatoes, quartered
1 tbsp garlic powder
2 tbsp apple cider vinegar
4 tbsp mayo (or maybe plain yogurt!)
2 tbsp Dijon
3/4 c sweet onion, chopped (I used green onion because that's all I had on hand)
1 1/2c fresh dill, chopped
1/4 tsp cayenne
salt and pepper to taste

Boil potatoes until tender. Chill. Combine all ingredients for dressing. Toss potatoes in dressing and chill until ready to serve.
