Okay, so over the last week or so, here's what we've made.
Pizza! We made pizza from scratch. The first one is tomato and goat cheese. The second is tomato and mushroom. They were both delicious. The dough is 100% whole wheat-- we adapted Chris's recipe and just substituted whole wheat flour for regular flour. Turned out good. We made the sauce from scratch, too. Fresh tomatoes, an onion, some garlic and spices.
The leftover sauce was reused in stuffed zucchini. We had two largish zucchini and needed to use them up, so we figured stuffing them was the way to go.
I actually took this photo after we ate. There was more originally. We stuffed the zucchini with rice, veggies (some frozen mixed, peppers, onions), and ground beef.
(Sorry this is blurry. I didn't realize that until I uploaded it.) Here's our little spread of baba ghanoush, hummus, goat cheese, and qorma sabzi. I didn't make any of it, just scooped it into little bowls. Oh, I did make the bread in the bread machine. It's whole wheat and pesto (which basically means I dumped a 1/4 cup of pesto).
Whole wheat pita bread. Followed a recipe in a book that made the dough in the bread machine, then baked by hand. They were a little crackly on the edges because I rolled them out too thin, but still good.
On tonight's agenda? Acorn squash soup. The squash has been roasted and is now cooling to be scooped into the slow cooker. Hooray!
