Okay, so I haven't posted here in forever, but there's an occasion to do so today! This is my entry for the contest going on at
Coconut and Lime, an awesome food blog (out of Baltimore, no less!).
Tropical Fruit Salad
1 ripe mango, peeled and cubed
1 pint of strawberries, sliced
1 pint of blackberries
1 starfruit, sliced
1 cup of papaya, seeded and diced
1 cup of pineapple, diced (fresh is best, canned is fine)
1/4 cup flaked coconut (unsweetened is best; I've never tried this with fresh coconut but it would probably be really good also)
3 tablespoons lime juice (fresh is best)
Easy peasy. Combine all ingredients except for the starfruit. Use the starfruit slices as garnish (though they're edible, too). Can be eaten immediately, but it's better if you let it chill for about two hours. And it's pretty. Serves four.
The most difficult part of this recipe is cutting all the stuff, but it's worth it in the end, especially on a muggy day like today. Also, this recipe (like most salads) lends itself well to experimentation! I've used lychees and oranges with good results, too.
