B&W or Color

I know I've asked this question before, but I'm still finding myself mulling over it. What got me thinking about it again is that I was looking at submission guidelines for some publishing houses today and am starting to work on my 1 pg story summary (wtf, so hard to fit 70+ books ((in my mind that's how long the whole Harbinger series will be)) into 1 page).

But, I was thinking in the car that the only reason I was doing it in Black and White to begin with was because of the cost of self-publishing a book in black and white versus a book in color. And keep in mind, if I did it in color, it would probably be very sepia-yellowish tones with dulled down colors.

So, thoughts and opinions would be great. Should I only do 10-20 pages in color as my "sample size" and just wait to see? I still want to try to keep plugging away so in case I don't get picked up I would still have a book to self-publish and sell by 2011.
