My people (imagine me thumping my chest manfully here) may not have the best education, but for the most part have some semblance of taste.
your mother's "house of moo" and "sewing room" collections are proof of Greenberg's theory. even if she were the only one in this world who had such collections, she would be the one who would set the curve for everyone else. for every "educated art fan" who is swayed by the "significance" of a piece rather than its asthetic appeal, there is a silly cow in your mom's house
so you can see how such an assumption could be made.
as far as what makes art good. i tend to go with Chip Kidd's "grandma" test
to be fair, she didn't buy all that crap, people bought it for her when she married a farmer. mom is still trying desperately to find a decent Diego Rivera print.

i'm not saying the theory is correct, i'm just pointing out that one could see how the conclusion could be reached. i know that your family is smart and they they do have good taste for the most part, but on first impression one might see the collection and be justifiably frightened

For lo, tho i walk in the valley of the shadow of Moo, i fear no bovine, for with me is always my steak sauce and my grill. i lay down my picnic blanket in green pastures and i shall not want for burgers or for cheese to put on them
