you don't have to leave the united states to get the same exact responses. go anywhere in the US where the chinese population is nil and you'll get the same response. chinese food (and restaurants) can be found all over the place, and it's amazing how the ingredients and dishes adapt to the local tastes.
i am usually pretty scared of what i'll actually be getting when i have chinese food outside of SF, LA and NYC.

you're right. i'm terrified of eating any chinese food outside of a major city. the few times i was desperately seeking chinese food in ann arbor, i was disappointed. i got really good at cooking my own chinese food at home in the midwest.
you are reminding me, i've got another story to tell about a carful of asians seeking asian food in windsor at the canadian border.
