They're ghosts, in the simplest terms, and they have no concept of human law or society. You may have heard of Grimmjow - he's the one who's... garnered the most attention.

Not exactly. Arrancar is their species, Espada is the term used for Aizen's best soldiers. All Espada are Arrancar, but not all Arrancar are Espada.
