That's like asking what makes people good. There are thousands of tiny nuances and subtle definitions. A good cup of coffee is like a good meal.

It's all in perspective. In the same way that I turn up my nose to this overly-thick pisswater coffee, were I just back from a six week pilgrimage in the desert, I'd be much more inclined to enjoy it.
