I bought bananas to be healthy... and then didn't eat them.
They been dying in the fruit bowl, and - feeling it necessary to justifying their existence AND my purchasing power - I looked up a recipe in one of my books for a "Banana Crunch Bread".
Recipe called for 2 bananas. I had 6.
So I compromised, and only doubled it (used 4 bananas).
I didn't have walnuts though, phooey :P
I also had purchased a new oven thermometer about a week ago, because my mom suspected the temp might be different in reality than what my dial was setting it to. She was right :: My oven heats things at a difference of 100* degrees hotter than what the dial is set to. No bloody wonder I burned my Hershey Kiss cookies back in January. I had to set the thing at about 255* in order to have it heated at 350*.
So. I now have 12 banana bread muffins, and a square loaf of banana bread. And all appear to have turned out really well :)
Funny thing is, I don't know that I even like banana bread still (used to, at least), I haven't had it for awhile, and I'm sorta wondering what to do with them now. (And yes, I'm an idiot, and haven't actually tried one yet since I baked them last night, ha.)
... The funnier thing is.... I talked to my mom on the phone last night while the things were baking - and SHE had apparently talked to my brother Reed on the phone earlier... and HE was making banana bread at the time, too.
How freakin' coincidental is THAT for ya' ?? From a family who might only annually make something like banana bread, and only out of having over-ripe bananas around.
My brother & I never chat or anything... yet I think we still have some strong cosmic connections.
I did just realize, though, that I neither baked nor received any bunny bread this year (Easter Sunday was yesterday) :( I really miss my mom's baking .... I should do more of it myself, though, too. (She made biscuits & chicken noodle soup for she & my dad last night for dinner! = envy!!)
