Today I did a bunch of nothing. I mean, I went out to get the eyedrops for my eyes that I use for the next 10 days and I also picked up a roll of wrapping paper (this one will probably last another 3 years) for the 2 gifts that arrived today and I got some batteries.
I should have been preparing what I have to cook tomorrow, but the only thing that needs the most prep is the things that go with the turkey while it bakes. I bought baby carrots, so I'll probably cut those in half and some celery that will definitely need to be cut, but I can do that later tonight or in the morning.
Now, I'm super concerned about the turkey. Not so much the actual cooking of it, but the fact that it doesn't feel completely thawed out. It's been in the freezer for 2 years now, so that's pretty solidly frozen. Sunday afternoon, I pulled it from the freezer and put it into the fridge hoping that 5 days was enough time to thaw. But I've decided to take it out of the fridge around 10am to give it 2 hours of room temp thaw before it goes in the oven to cook at noon. Thankfully we have a ham coming and whenever the turkey finishes cooking, I'll use a good portion of it for turkey soup, tacos, enchiladas in the coming weeks.
I also need to vacuum. I didn't do that earlier today as I slept off and on from the time I got back from CVS at 11am until I made dinner at 6pm. I guess I'm storing up the energy that I'm going to need for tomorrow.
I have no idea what time John and Colleen are coming down but I plan on starting food prep at 7am and I'm going to be kind and not start the vacuum until 8:30 or 9.
I'm hoping for not a stressful Christmas day.
