Chicken Pot Pie
(Done my way)
I have been working this recipe for a couple years, and the ultimate one that my family enjoyed was a mash up of three different recipes. Enjoy!

6 c. cooked chicken, roughly chopped
1 can cream of chicken soup + 1 can of milk
1 (16 oz.) pkg. of frozen peas and carrots
1 large onion, chopped
3 stalks, celery, chopped
1/3 c. butter
1 pkg. pie crust
salt/peppe/parsley to taste

Place one sheet of raw pie crust in pie pan, and bake according to instructions for 5-8 minutes until it just begins to brown.
In a skillet, add a tab of butter and the onion and celery. Salt/pepper to taste, and cook until the onions are translucent, about 5-7 minutes.
In  medium bowl, add soup, chicken, milk, and frozen vegetables. Mix until blended. Then add onion and celery.
Sprinkle salt/pepper/parsely, then mix one more time.
Pour mixture into the prepared pie shell, dot with the remaining butter, and top pie pan with the other raw pie sheet. Cutting any excess off, but leaving enough to form a seal around the pie.
Using a sharp knife, cut an :X" in the top of the raw pie crust, to let the steam escape.
Bake in 400* ovem for 30-40 minutes until crust is turning golden brown.

This is a sure family pleaser; my 12 year old hates pot pie and gobbled this up, and my 6 year old devoured the veggies in this.
