Anyway, after only a week, my batches seem to be not so bad, if a little thin on the finish. I'm hoping that'll improve as it sits, but since it's sitting in the fridge, I'm not going to hold my breath. My success with my essentially idiot proof recipe might just inspire me to do more, and since I have close to two gallons in the fridge, it'll probably last me.
Ya, I figure with 2 pounds of honey, and maybe a little extra sugar added by the fruit additions, your batch had a starting gravity of around 1.075, maybe 1.080. That's just over 9% potential ABV, assuming it fermented out completely dry. Since you stopped it early, it's most likely somewhere around the midpoint, like 4 to 5 %ABV. With not a lot to work with, and stopping the ferment short, you're not gonna get much in the way of finish or mouthfeel. But you can, and it seems did, get tasty. :-)
This batch I just started starts out with a gravity most likely around 1.130 - and finishes supposedly around 1.020. That'll still be on the verge of cloyingly sweet, but around 14%ABV. Should be an interesting experiment. Hehe.
