yea, cross contamination is a pretty big thing with oatmeal. It's very often milled with the same machinery as wheat. I don't have a problem with it, so far as I can tell. But Irish oats (like legit from Ireland) are always gluten free. what other grains? in terms of flours, sorghum flour, potato flour, for sure rice flour, tapioca flour, corn flour, all that kind of good stuff. for cooking, if you are mixing these flours, xanthan gum and potato starch are really important, but I haven't really experimented, so I don't know why. and then there is quinoa. my true love. It's delicious. Plus, quinoa flakes are really good for thickening stuff that you would usually use flour for (cooking-wise).
I'll let you know how these cookies turn out. I've got a couple different recipes that I'm going to try ranging from all out vegan to just gluten-free. (Though, because I can't have cows milk I always substitute in goats milk and or earth balance spread.) I'm pretty psyched.
The best (by far) gluten free cake mix I've EVER had is the Namaste Spice Cake mix. My roommates literally had no idea that it was gluten free and one of them claims it's her favorite cake EVAR. Namaste's stuff is AMAZING.
