who knows how well i'll keep up with this food blog thing. i've got other things going on, but it's fun for now...

today i got up early and prepared a pseudo-massaman curry while at the same time cooking rice to go with it, and baking a sweet potato.

1/2 can coconut milk
1/4 c. peanut butter
1-2 tablespoons red curry sauce
veggies (i used carrot and chopped cabbage- but it's really good with onions, potato, red bell pepper)
tofu

saute tofu and veggies in a pan in coconut oil (or whatever oil). mix coconut milk, peanut butter, and curry sauce together. when veggies are almost done, add sauce and cook for a few minutes.

i want to make some nutritional bars. date rolls are cheaper than dates for the most part, so i plan to use those as well as some other things like flax meal, green food powder, etc.
