more food

for work yesterday i baked a sweet potato. i cut up some zucchini and cooked it with the black beans i had previously made, plus some salsa and corn. i added some salt and nutritional yeast and when it was done, i put the zucchini mix into a big short thermos thing that i think i got at the really really free market or a thrift store (it's lined with stainless steel i'm pretty sure), so it was still hot a few hours later. i ate that with the sweet potato during a break. it was a lot of food, but somehow i wasn't full for long. that seems to be an ongoing issue.

i ate leftover "boiled whole greens with spicy peanut sauce", which isn't as good when it's that cold.

last night i baked some tofu with tamari sauce, garlic powder, and olive oil. i ate it with raw spinach and leftover sauce/dressing from the boiled whole greens with spicy peanut sauce recipe. that was pretty good and filling. more apples with peanut butter were also consumed. i had baked another sweet potato last night for today, but didn't end up eating it. that'll be for tomorrow or friday.

i have to make more "lemon quinoa" which is like indian-style lemon rice, but with quinoa instead of rice. or maybe i'll have rice. anyway, i found the recipe/video here: http://youtube.com/watch?v=AmSNobM6ebM
i use peas instead of the dals and no chilis. oh, and i use brown mustard seeds instead of black since i don't have black. it tastes so fresh. yum.
