3 pounds boneless, skinnless chicken theighs
1/4 teaspoon salt
1/2 cup bacon, diced
1 diced onion
1 teaspoon garlic, finely chopped
1 cup dry red wine
1 cup water
1 tablespoon chicken bouillon granules
1 tablespoon currant jelly
10 black peppercorns, crushed
1 bay leaf
1/4 teaspoon dried rosemary, crushed
1/8 teaspoon dried thyme, crushed
3 tablespoons water
DIRECTIONS:
Preheat oven to 350
place the chicken in a roasting pan with no oil over med-high heat. brown chicken, stirring occasionally making sure to get as much as possible to stick to the bottom of the pan. when the chicken is seared nicely, but not fully cooked add wine and water and deglaze the pan. add the rest of the ingredients, stir, cover and place into the 350 degree oven for 1 hour.
