In Ontario, we have several. One specifically for Design/illustration/graphics/etc. is called OCAD (there's also one in Alberta, I believed called ACAD). It's a pretty good school, but kind of difficult to get into unless you're really good. A lot of students that go here love it, and if you can handle the work load you get an amazing portfolio out of it.
Another really famous school is Sheridan. This school has a co-op program you can get into that will place you in a company and you can work for them for half or for a full semester. Sheridan is internationally known for its animation program, but it also has an illustration and other art programs that you can apply to. The good thing about this school is that it teaches you the basics right away and you're immediately taught things like layout, character movement, background illustrations, etc. But it's probably one of the most competitive art school in Canada.
There are other smaller schools that offer an art degree, such as York University which allows you to double major in illustration and graphic design, which is a part of Sheridan College. It also offers other medias (like traditional or whatnot). Or Max the Mutt, which is also a smaller animation school located in Toronto, but it's pretty hands-on and their studio is pretty nice.
I have no idea how helpful this, but here are the best known school in Ontario. ;3; I've visited all these schools and have some more information on them if you're at all curious? But uh yeah /o\ if it isn't what you were hoping for i'm sorry orz orz

The process of actually getting a job requires you to contact the co-op officials and apply for the jobs of your choice. The college will help you get the job, 95% of the time everyone gets a job, too. Most of the jobs are paid (you can probably check if its a paid job or just an experience internship when you apply). I think the average, from the last time I check, is around $300-$500 a week? But that really depends on which internship you apply to.
