An Easy No-Fail Mousse

Mix together in 2 1/2 cup saucepan: 1 envelope (1 oz) unflavored gelatin, 1/2 cup sugar, 1/8 (1 shake) salt, and stir in 1 cup milk (room temperature will blend better). Place over medium heat and dissolve gelatin. (about 7 mins) Add 1 6-oz (small package) semisweet chocolate chip pieces (Nestles or any other) and cook only until chocolate is (barely) melted. Remove from heat and stir to get all little pieces of choc completely melted. Blend in 1 tsp. liquid vanilla (extract).

Chill, probably total about 45 mins, but check because you don't want it to get too solid because you're going to add 1 cup heavy cream (whipping cream) which you have whipped separately.

When the two textures are about the same (the choc. mixture and the whipped cream), blend the two together. I add the cream a little at a time to the chocolate.

Put in 4 cup mold and chill until firm (about 3-4 hours.) You can make this a day prior.

The recipe was from a Kahlua (coffee liqueur) web site, and they want you to add about1/2 cup Kahlua along with the vanilla. I have also done this, but honestly the flavor didn't come through.

(After you've noticed enough of my recipes, you'll note that I really like ones that you can make a day in advance. There's to do on the day of a party.)
