Eat your veggies!

So it's 5 days into the 30-day challenge, and I'm really enjoying this so far. In case you're curious, here is what I've eaten in the last few days:

4/1
B: Cereal
L: Peanut butter & jelly sandwich, some crackers
D: Breakfast for dinner (scrambled eggs and toast); some cheese pizza at a concert later

4/2
B: Scrambled eggs, toast
L: PB&J, vanilla wafers (soooo good)
D: Spaghetti with pasta sauce, salad

4/3
B: Cereal
L: Mac & cheese
D: Tofu stir-fry lo mein -- the best new dish I've had in a while, and super easy to make (we used ramen noodles)

4/4
B: Scrambled eggs, toast
L: Salad bar at Ruby Tuesday's (they have an awesome salad bar)
D: Veggie pizza from Pizza Hut -- surprisingly good

4/5
B: Cereal (riveting, I know. Pretty much have this every day all year long.)
L: Leftover veggie pizza, vanilla wafers
D: Egg salad sandwich (egg salad, lettuce, wheat bread), lentil soup -- my roommate was awesome and made dinner while I was hosting my review session for Psyc 102

I'm really enjoying the food I've had so far this month. I have had a multivitamin and lost of dairy products each day, too, so don't worry if you think my diet is missing out on any key ingredients or nutrition. ;) I'm hoping to find some more recipes to try out, too, instead of just eating the same thing every day. I'm especially fond of tofu, so I'm going to talk to David to see if he has any more ideas of things we can make with that.

Hope you're enjoying your month so far! I'm off to work on a presentation for Methods...shouldn't be too bad.

P.S. I saw New Moon from the Twilight saga last night (although I haven't seen Twilight yet). It was terrible...mediocre.
