Tonight I made bok choy with garlic and onion with a roasted eggplant, tahini and cumin. I’ve tried to make this Israeli roasted eggplant recipe sooooo many times but tonight was the first night it actually worked. It was delicious. The trick was a super hot pre-heated oven at 200C and a well oiled eggplant. It just oozed of the skin like butter.
So apart from that my parents have decided to holiday in Singapore and also visit my dads mum in India .... they’ve been away a week and will be gone 6 weeks. I miss them already.
I took Caleb to the doctor today - turns out he’s got severe eczema, very itchy and uncomfortable for him. Poor lil guy. He’s been killing us both at night because he’s constantly itchy. We got him some prescription meds and fingers crossed they work.
