besides having a delicious sushi feast with some lovely girls and watching the prestige again, my day just got better when while looking for another blanket (our dumb heater is broken) i found a stack of cds i thought were lost forever! so exciting!

for those who wanted it, here is the recipe for the chicken curry i made the other night.
ingredients:
2 tablespoons vegetable oil
1 white onion, chopped
3 cloves garlic, crushed
1 pound skinless, bonless chicken breast halves, chopped
1 bell pepper
1 package of sliced mushrooms
3 tablespoons of curry powder
2 tablespoons of crushed red pepper
2 teaspoons of garlic salt
1 table spoon of sugar
1.5 cans of unsweetened coconut milk
1/3 cup chicken broth
salt and pepper to taste
directions:
heat the oil in a skillet over medium heat.
stir in the onion and garlic, cook until tender.
mix in the chicken and cook 10 minutes or until juices run clear.
mix the mushrooms, bell pepper, curry, red pepper, sugar and garlic salt into the skillet.
pour in the coconut milk and chicken broth.
season with salt and pepper.
reduce heat to low.
continue cooking, stirring occasionally for 30 minutes.
ok so what i listed above is basically how i made it. i used a little more than a pound of chicken and i like spicy so i added 2 tablespoons of red pepper. i also added more garlic than the original recipe because i like garlic. i also cooked broccoli on the side, and while everyone else ate their broccoli on the side, i mixed it right into the curry sauce and it was delicious. if you wanted to thicken the sauce, you could add in some corn starch or something, but i like it runny so it soaks into the rice. we used plain old white rice, but you could use jasmine rice or something else tasty if you so choose. the original recipe just had cauliflower instead of mushrooms and bell peppers, but that sounded gross to me. some of the reviews of the original recipe on the website added cubed potatos, a touch of lime, or brown sugar instead of regular sugar. next time i make it, i would add the mushrooms earlier on, they were sort of al dente. anyways, so so so so good. oh also instead of chicken you could add tofu or more vegetables or whatever else you want. it is mostly about the onions, garlic, coconut milk and the seasonings. so delicious. seroiusly.
