Hot summer days always say the same thing to me: salad caprese. It's pretty much a no-no on the kidney diet, but I decided not to deny myself this week. So thanks to buying a large quantity of fresh basil, a bag of roma tomatoes and two egg-sized mozarellas, I've had the following meals this past week:
Salad Caprese--in a bowl, not appetizer style--with slices of rare filet
tomato sandwich with basil instead of lettuce, extra dried herbs, and provolone on soft white bread (the kind that sticks to the roof of your mouth when slathered in mayo)
Angelhair Pasta smothered in chopped, sauteed garlic, just-warmed tomato, basil, red onion and lots of aged parmesan
Two of the meals would've been costly in any cafe and one of them would never be offered professionally. Heh.
